Restaurant and catering staff recruitment in Mauritius: cooks, pastry chefs and servers

Restaurant and catering recruitment in Mauritius needs a brief built around your menu and service. Indian Ocean Millenium Partners sources skilled and semi-skilled workers from Nepal and India for restaurants, cafés, canteens and catering companies. Separate food preparation, customer service and event duties before setting your headcount.

Our manpower consultancy in Vacoas-Phoenix begins with consultation, then sourcing and screening, followed by placement with document preparation and follow-up. Tell us the meals or covers expected, kitchen equipment, service style and work locations so candidates can be assessed against the job.

Last reviewed October 2026. Rules change, so confirm the current requirements with the authorities before you apply.

Which restaurant and catering roles can you recruit?

  • Cooks, chefs and pastry chefs. Describe cuisine, menu complexity, section responsibility, portion control and supervision. Name the roles: head chef, sous chef, cooks, commis, pastry chefs and bakers.
  • Kitchen helpers and dishwashers. Specify preparation, washing-up, cleaning and stock handling, with the equipment involved. Include dishwashers, kitchen porters and stewards.
  • Servers, waiters and baristas. Set out table service, order taking, customer communication, coffee preparation and cleaning routines. Cover servers, waiters, hosts, bartenders and baristas.
  • Catering and food service staff. Identify production, packing, transport support, buffet service and clearing duties at each venue. Include catering assistants, food packers and event service staff.

Ask a chef to explain preparation for a service, or a waiter to handle an order change. Discuss coffee equipment with barista candidates.

What food-handler requirements must employers check?

The Food Regulations 2024 require food handlers to hold a Food Handler’s Certificate and provide for medical examination and approved food safety training. Check the requirements for each worker’s actual duties, including serving and handling food. Confirm the current procedure with the health authorities before assigning those duties.

The Tourism Authority also publishes a restaurant Tourist Enterprise Licence checklist. Check the establishment’s applicable authorisations separately from individual food-handler requirements when planning recruitment.

Ask candidates how they prevent raw and ready-to-eat food from mixing. The Mauritius Food Standards Agency’s allergen guidance recommends separate utensils and careful cleaning. Include an exercise on communicating an allergy request to the kitchen without improvising ingredient substitutions.

How should you plan staffing around service hours?

Give the actual roster, including early preparation, evening closing, weekends or split shifts where relevant. Identify breaks, transport and who supervises each service. For off-site catering, specify locations, setup times and the person responsible for directing the crew.

Build induction around your equipment, hot surfaces, knife handling and cleaning products. Explain food storage and cleaning procedures before the first service. Use your bookings and event calendar to plan additional staff rather than assuming one seasonal pattern for every restaurant or canteen.

Which permit steps apply to overseas restaurant staff?

Ordinary Work Permit applications go through National E-Licensing Platform (NELS) on the Economic Development Board (EDB) portal. The Ministry of Labour and Industrial Relations requires a vetted contract for monthly salaries of MUR 50,000 or less. Permission in Principle is no longer required and quota rules have been abolished, but employers must demonstrate unsuccessful local recruitment.
